When it comes to our pizza at Pocono Brewing Company, we take special care from the dough, to the oven itself, and the toppings to create a perfect pizza to pair with your favorite beer. So what is wood fired pizza, and what makes it so special?
The Oven
Pizza ovens can vary in how they’re built, whether using brick or clay, but they’re nothing without wood. With wood being burned to heat the oven, temperatures can get extremely high with readings from 800 to 1200 degrees Fahrenheit! This also means the pizza is cooking fast, giving it a unique flavor and bite as opposed to a typical oven. Our oven here at PBC was sourced from a small company in Naples Italy to bring the worldly experience of Napoli style pizza to our Pennsylvania neighborhood.
The Pizza
When you toss some dough into a 1200 degree oven, it’s going to cook fast. That’s what gives our pizza that special crispy bottom and the fluffy buoyant crust with those unique bubbles. The aroma of the wood also gives the pizza a unique flavor. Don’t worry, just because it cooks so fast doesn’t mean toppings are lost, they instead are savored. Cheese melts just right, and other fresh toppings are graced with that sweet smoky aroma from the wood.
